Assyrtiko
Dry still wine. Assyrtiko plot is probably the toughest to farm. Really rocky with high inclinations and on top of that the last to harvest in the middle of October, with the risk of losing production due to the increasing rainfalls really high. However the result is rewarding, with the extended ripening period providing an extra fruity dimension to the characteristic Assyrtiko’s mineral core.
